Mandarin Orange Cake
Ingredients:
2 cups sugar
2 cups flour
2 teaspoons vanilla
2 teaspoons soda
2 eggs
2 cans (11 ounces each) Mandarin oranges, drained
Glaze: (Cook
this while cake is in it's final stage.)
1-1/2 cups sugar (white sugar or brown sugar, as you prefer or have on hand)
6 tablespoons milk
6 tablespoons butter (Hint: almost a whole cube)
Cook until crystals are gone and keep it warm until ready to pour over hot
cake
Instructions:
Mix together sugar, flour, vanilla, soda, eggs and Mandarin oranges. It's rather thick, but that's okay.
Plop into 13 X 9-glass pan sprayed with Pam spray (Oranges and metal pans don't work well together).
Bake at 350 degrees for 30 minutes I have over-cooked mine at 40 minutes, so look at the cake at 30 minutes, and
again at 35 if it's not done.
While the cake is cooking, cook the glaze until it comes to a boil. Then pour glaze over hot cake. (I have poked
holes with a fork all over the cake when it first came out of the oven and the glaze went right into the cake!)
After it cools and just before you serve it, put Cool Whip on top of cake, or on individual servings. This cake
is rich and very moist.
